  • 1 tsp vanilla extract
  • 1 tbsp melted coconut oil

  1. Preheat oven to 375°F (190°C). Lightly grease a muffin tin or line with silicone liners. Tip: Silicone liners prevent sticking without added oil
  2. In a large bowl, mix oats, cinnamon, baking powder, and salt. Stir in diced apple. Tip: Leave apple skin on for extra fiber
  3. In another bowl, whisk together almond milk, egg, maple syrup, vanilla, and coconut oil. Tip: Let cold ingredients come to room temperature for even mixing
  4. Pour wet ingredients into dry ingredients and stir until just combined. Tip: Don't overmix—lumpy batter makes tender oatmeal cups
  5. Divide mixture evenly among 6 muffin cups (about 1/3 cup each). Bake for 22-25 minutes until set and golden. Tip: Rotate pan halfway for even baking
