  • 1.5 cups mashed ripe bananas (about 3 medium)
  • 0.5 cup natural creamy peanut butter
  • 2 large eggs
  • 0.25 cup maple syrup
  • 1 tsp vanilla extract
  • 1.5 cups whole wheat flour
  • 0.5 cup vanilla protein powder
  • 1 tsp baking soda
  • 0.5 tsp cinnamon
  • 0.25 tsp salt

  1. Preheat oven to 350°F (175°C). Line a muffin tin with paper liners or grease lightly. Tip: For easy removal, use parchment paper liners instead of wax
  2. In a large bowl, whisk together mashed bananas, peanut butter, eggs, maple syrup, and vanilla until smooth.
  3. Add flour, protein powder, baking soda, cinnamon (if using), and salt. Stir until just combined—don't overmix. Tip: Lumpy batter makes fluffier muffins
  4. Divide batter evenly among 12 muffin cups (about 3/4 full). Swirl extra peanut butter on top if desired.
  5. Bake for 18-22 minutes until tops spring back when lightly pressed. Cool in pan for 5 minutes, then transfer to a rack.
