  • 1 tbsp pure maple syrup
  • 1/2 tsp vanilla extract
  • 2 tbsp sliced almonds

  1. In a medium bowl, mash blueberries with a fork until broken down but still slightly chunky. Tip: If using frozen blueberries, thaw first for easier mashing
  2. Add chia seeds, almond milk, maple syrup (if using), and vanilla extract. Whisk vigorously for 1 minute to prevent clumping. Tip: Set a timer - proper whisking is key to smooth pudding
  3. Divide mixture evenly between two jars or glasses. Cover and refrigerate for at least 4 hours, or overnight. Tip: The longer it sits, the thicker it gets
  4. Before serving, top with sliced almonds and additional blueberries if desired. Tip: For extra crunch, toast the almonds first
