  • 1/2 cup pitted dates, chopped
  • 1/2 cup walnuts, chopped
  • 2 tbsp maple syrup
  • 1 tbsp coconut oil
  • 1/2 tsp cinnamon
  • 1/4 tsp sea salt
  • 1/4 cup Greek yogurt (or coconut yogurt for dairy-free)

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper. Tip: Prick sweet potatoes with a fork for even cooking.
  2. Place sweet potatoes on the baking sheet and bake for 40-45 minutes, or until tender. Tip: Rotate halfway through for even baking.
  3. While sweet potatoes bake, heat coconut oil in a small saucepan over medium heat. Add dates, walnuts, maple syrup, cinnamon, and salt. Cook for 3-4 minutes, stirring frequently, until dates soften and mixture becomes fragrant. Tip: Add a splash of water if mixture sticks.
  4. Once sweet potatoes are done, let cool slightly. Slice open and fluff the insides with a fork. Tip: Leave a border to keep the skin intact.
  5. Stuff each sweet potato with the date-walnut mixture. Drizzle with extra maple syrup if desired and top with yogurt. Tip: Serve warm for the best flavor.
