  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tbsp olive oil
  • 2 cups mixed vegetables (carrots, broccoli, bell peppers)
  • 1 tbsp soy sauce
  • 1 tbsp maple syrup

  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper. Tip: Use parchment paper for easy cleanup
  2. In a mixing bowl, whisk together cocoa powder, smoked paprika, garlic powder, onion powder, olive oil, soy sauce, and maple syrup. Tip: Ensure the mixture is well combined
  3. Add the tofu cubes to the bowl and toss until evenly coated. Tip: Gently toss to avoid breaking the tofu
  4. Arrange the tofu and mixed vegetables on the prepared baking sheet. Tip: Spread them out for even cooking
  5. Roast in the oven for 25-30 minutes, flipping halfway through, until the tofu is crispy and the vegetables are tender. Tip: Check for doneness at the 25-minute mark
