  • 2 6-oz fillets fresh salmon, skin-on
  • 1/4 cup almonds, finely chopped
  • 1 tbsp unsweetened cocoa powder
  • 1/2 tsp smoked paprika
  • 1/4 tsp sea salt
  • 1 tbsp olive oil
  • 1 tsp honey

  1. Preheat oven to 400°F (200°C). Line baking sheet with parchment. Tip: For crispier crust, place a wire rack on the baking sheet
  2. Mix almonds, cocoa powder, paprika, and salt in a bowl. Tip: Pulse almonds in food processor for finer texture if preferred
  3. Brush salmon fillets with olive oil (and honey if using). Tip: Honey helps the crust adhere but can be omitted for sugar-free
  4. Press almond mixture onto the top of each fillet. Tip: Use the back of a spoon to gently pack the crust
  5. Bake for 12-15 minutes until salmon flakes easily. Tip: Internal temperature should reach 145°F (63°C)
