  • 1 lb pork tenderloin
  • 2 tbsp olive oil
  • 1 tbsp finely ground coffee
  • 1 tbsp maple syrup
  • 1 tsp Dijon mustard
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 2 cups chopped carrots
  • 2 cups chopped Brussels sprouts
  • 1 cup quartered red potatoes

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper. Tip: Parchment paper prevents sticking and makes cleanup easier.
  2. In a small bowl, whisk together olive oil, ground coffee, maple syrup, Dijon mustard, garlic powder, smoked paprika, salt, and pepper. Tip: For a smoother glaze, dissolve the coffee in 1 tbsp hot water first.
  3. Place pork tenderloin in the center of the baking sheet. Brush half of the coffee glaze over the pork. Tip: Reserve the other half for basting later.
  4. Arrange carrots, Brussels sprouts, and potatoes around the pork. Drizzle with 1 tbsp olive oil and season lightly with salt and pepper. Tip: Cut vegetables into even sizes for uniform roasting.
  5. Roast for 20 minutes. Remove from oven, baste pork with remaining glaze, and stir vegetables. Tip: Use a meat thermometer to check for doneness (145°F internal temp).
  6. Return to oven and roast for another 10-15 minutes until pork reaches 145°F (63°C) and vegetables are tender. Tip: Let pork rest for 5 minutes before slicing.
