Ingredients

Ingredients
  • 1.5 lbs ground turkey (93% lean)
  • 1 cup whole wheat breadcrumbs
  • 1 large egg
  • 1/2 cup diced onion
  • 1/2 cup diced bell pepper
  • 2 tbsp Worcestershire sauce
  • 1 tbsp olive oil
  • 1 tbsp ground coffee
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/2 tsp black pepper

Method

Instructions
  1. Preheat oven to 375°F (190°C) and lightly grease a loaf pan with olive oil. Tip: Use a non-stick spray for easier cleanup.
  2. In a small bowl, mix the ground coffee, smoked paprika, garlic powder, salt, and black pepper to create the rub. Tip: For a stronger coffee flavor, use finely ground espresso.
  3. In a large mixing bowl, combine the ground turkey, breadcrumbs, egg, diced onion, bell pepper, and Worcestershire sauce. Mix gently until just combined. Tip: Overmixing can make the meatloaf dense.
  4. Transfer the mixture to the prepared loaf pan and shape it into a loaf. Brush the top with olive oil and sprinkle the coffee rub evenly over the surface. Tip: Press the rub gently into the meat to help it adhere.
  5. Bake for 45-50 minutes, or until the internal temperature reaches 165°F (74°C). Let rest for 5 minutes before slicing. Tip: Use a meat thermometer for accuracy.
