- In a large mixing bowl, combine the ground turkey, breadcrumbs, egg, diced onion, bell pepper, and Worcestershire sauce. Mix gently until just combined. Tip: Overmixing can make the meatloaf dense.
- Transfer the mixture to the prepared loaf pan and shape it into a loaf. Brush the top with olive oil and sprinkle the coffee rub evenly over the surface. Tip: Press the rub gently into the meat to help it adhere.
