  • 1.5 cups white whole wheat flour
  • 1/3 cup unsweetened cocoa powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 2 cups shredded zucchini (not drained)
  • 1/4 cup pure maple syrup
  • 1/4 cup unsweetened applesauce
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup dark chocolate chips

  1. Preheat oven to 350°F (175°C). Grease a 9x5 loaf pan or line with parchment paper. Tip: Use coconut oil for easy release
  2. In a large bowl, whisk together flour, cocoa powder, baking soda, and salt. Tip: Sift if your cocoa is lumpy
  3. In another bowl, mix zucchini, maple syrup, applesauce, eggs, and vanilla until combined. Tip: No need to squeeze zucchini - the moisture helps!
  4. Pour wet ingredients into dry ingredients. Stir until just combined, then fold in chocolate chips if using. Tip: Don't overmix to keep it tender
  5. Pour batter into prepared pan. Bake 45-50 minutes until a toothpick comes out clean. Tip: Check at 45 minutes - ovens vary
  6. Cool in pan 10 minutes, then transfer to a wire rack to cool completely before slicing. Tip: Resist cutting warm - it firms up as it cools
