  • 2 medium sweet potatoes, diced (about 3 cups)
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup diced red bell pepper
  • 1/2 cup diced red onion
  • 2 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1/2 tsp chili powder
  • 1 cup shredded cheddar cheese (or dairy-free alternative)
  • 1/4 cup chopped fresh cilantro
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper

  1. Preheat oven to 375°F (190°C). Lightly grease a 9x13-inch baking dish. Tip: For easier cleanup, line the dish with parchment paper.
  2. In a large bowl, toss diced sweet potatoes with olive oil, cumin, smoked paprika, chili powder, salt, and pepper until evenly coated. Tip: Leave the skins on for extra fiber and nutrients.
  3. Spread the seasoned sweet potatoes in the prepared baking dish. Roast for 20 minutes. Tip: Stir halfway through for even cooking.
  4. Remove from oven and add black beans, red bell pepper, red onion, and garlic. Stir to combine. Tip: For extra flavor, sauté the onions and garlic first.
  5. Sprinkle cheese evenly over the top (if using). Return to oven and bake for another 15-20 minutes, until sweet potatoes are tender and cheese is melted. Tip: Broil for 1-2 minutes at the end for a golden top.
  6. Garnish with fresh cilantro before serving. Tip: Swap cilantro for parsley if preferred.
