- Preheat oven to 400°F (200°C). Pat pork dry and season with garlic powder. Tip: Let pork sit at room temperature for 15 minutes for even cooking.
- Heat skillet over medium-high. Sear pork on all sides until golden (2-3 minutes per side). Transfer to plate. Tip: Don't move pork while searing to develop a good crust.
- In saucepan, combine lychee syrup, ginger, soy sauce, vinegar, and pepper flakes. Simmer 5 minutes. Tip: Use leftover lychees in cocktails or fruit salads.
- Mix cornstarch and water, whisk into glaze. Cook until thickened (1 minute). Reserve 1/4 cup glaze. Tip: Cornstarch slurry prevents lumps in the sauce.
- Brush pork with glaze, roast until 145°F (63°C) internally (12-15 minutes). Rest 5 minutes. Tip: Carryover cooking will bring pork to 145°F.
- Slice pork, drizzle with reserved glaze. Garnish with lychees and sesame seeds. Tip: Slice against the grain for tender pieces.
