  • 1 cup canned lychee syrup (from 20oz can)
  • 1/4 cup fresh lychees, chopped
  • 2 tbsp fresh ginger, grated
  • 2 tbsp low-sodium soy sauce
  • 1 tbsp rice vinegar
  • 1 tsp garlic powder
  • 1/2 tsp red pepper flakes
  • 1 tbsp cornstarch
  • 1 tbsp water
  • 1 tbsp sesame seeds

Method

  1. Preheat oven to 400°F (200°C). Pat pork dry and season with garlic powder. Tip: Let pork sit at room temperature for 15 minutes for even cooking.
  2. Heat skillet over medium-high. Sear pork on all sides until golden (2-3 minutes per side). Transfer to plate. Tip: Don't move pork while searing to develop a good crust.
  3. In saucepan, combine lychee syrup, ginger, soy sauce, vinegar, and pepper flakes. Simmer 5 minutes. Tip: Use leftover lychees in cocktails or fruit salads.
  4. Mix cornstarch and water, whisk into glaze. Cook until thickened (1 minute). Reserve 1/4 cup glaze. Tip: Cornstarch slurry prevents lumps in the sauce.
  5. Brush pork with glaze, roast until 145°F (63°C) internally (12-15 minutes). Rest 5 minutes. Tip: Carryover cooking will bring pork to 145°F.
  6. Slice pork, drizzle with reserved glaze. Garnish with lychees and sesame seeds. Tip: Slice against the grain for tender pieces.
