  • 1 cup black beans, drained and rinsed
  • 1 cup diced mango
  • 1/2 cup diced red bell pepper
  • 1/4 cup chopped cilantro
  • 1 tbsp lime juice
  • 1 tbsp olive oil
  • 1/2 tsp ground cumin
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1 avocado, sliced for serving

  1. In a medium saucepan, bring the water or vegetable broth to a boil. Add the quinoa, reduce heat to low, cover, and simmer for 15 minutes or until the liquid is absorbed. Remove from heat and let sit, covered, for 5 minutes. Fluff with a fork. Tip: For extra flavor, cook the quinoa in vegetable broth instead of water.
  2. In a large mixing bowl, combine the cooked quinoa, black beans, mango, red bell pepper, and cilantro (if using). Tip: If you’re not a fan of cilantro, try substituting with fresh parsley.
  3. In a small bowl, whisk together the lime juice, olive oil, cumin, salt, and pepper. Pour the dressing over the quinoa mixture and toss gently to combine. Tip: Adjust the lime juice and salt to taste.
  4. Divide the quinoa mixture between two bowls. Top with sliced avocado and serve immediately. Tip: For added crunch, sprinkle with toasted pumpkin seeds or crushed tortilla chips.
