  • 3 tbsp fresh lime juice
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tsp honey
  • 1/4 tsp red pepper flakes
  • 1/4 cup cilantro, chopped
  • 1/2 tsp sea salt

  1. In a bowl, whisk together lime juice, olive oil, garlic, honey (if using), red pepper flakes, and salt. Tip: For extra tender shrimp, add 1 tbsp papaya puree to the marinade—the enzymes naturally soften seafood.
  2. Add shrimp and toss to coat. Marinate 10 minutes at room temperature (or up to 30 minutes refrigerated). Tip: Over-marinating can make shrimp mushy—limit to 30 minutes max.
  3. Thread shrimp and papaya alternately onto skewers. Tip: Leave a small space between pieces for even cooking.
  4. Grill over medium-high heat 2-3 minutes per side until shrimp turn pink and opaque. Tip: Grill papaya pieces separately if they’re very ripe to prevent falling apart.
