  • 2 6-oz fillets fresh salmon, skin-on
  • 1/4 cup passion fruit purée
  • 1 tbsp honey
  • 1 tbsp soy sauce (or tamari for gluten-free)
  • 1 tsp minced ginger
  • 1/2 lb asparagus, trimmed
  • 1 tbsp olive oil
  • 1/4 tsp sea salt
  • 1 tbsp chopped cilantro (for garnish)

Method
 

Instructions
  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment. Tip: Parchment prevents sticking without added oil
  2. Whisk passion fruit purée, honey, soy sauce, and ginger in a saucepan. Simmer 3 minutes until slightly thickened. Tip: Stir constantly to prevent burning
  3. Toss asparagus with olive oil and salt. Arrange on one side of the baking sheet. Tip: Leave space between spears for even cooking
  4. Place salmon skin-side down on the other side. Brush fillets generously with glaze. Tip: Reserve half the glaze for later
  5. Roast 12-15 minutes until salmon flakes easily. Brush with remaining glaze. Tip: Internal temp should reach 145°F (63°C)
