  1. In a large mixing bowl, combine the rolled oats, peanut butter, honey, protein powder, and chia seeds (if using). Stir until well mixed. Tip: If the mixture is too sticky, add a bit more oats.
  2. Roll the mixture into 12 equal-sized balls, about 1 inch in diameter, and place them on a parchment-lined baking sheet. Tip: Wet your hands slightly to prevent sticking.
  3. Place the baking sheet in the refrigerator for 15 minutes to firm up the balls. Tip: Chilling helps them hold their shape.
  4. Melt the dark chocolate chips in a microwave-safe bowl in 30-second intervals, stirring between each, until smooth. Tip: Be careful not to overheat the chocolate.
  5. Drizzle the melted chocolate over the chilled protein balls. Return to the fridge for another 5 minutes to set the chocolate. Tip: Use a spoon or piping bag for neat drizzles.
