  • 2 6-oz fillets fresh salmon, skin-on
  • 1/2 cup fresh pineapple, finely diced
  • 1 tbsp fresh ginger, grated
  • 1 tbsp honey
  • 1 tbsp rice vinegar
  • 1/2 tsp garlic powder
  • 1/4 tsp red pepper flakes
  • 1/2 tsp sea salt
  • 1 tbsp avocado oil
  • 1 tbsp fresh cilantro, chopped (for garnish)

Instructions
  1. Preheat broiler to high and line baking sheet with parchment. Tip: Position oven rack 6 inches from heat source
  2. In small saucepan over medium heat, combine pineapple, ginger, honey, vinegar, garlic powder, and red pepper flakes. Simmer 5 minutes until slightly thickened, mashing pineapple with spoon. Tip: For smoother glaze, blend briefly with immersion blender
  3. Pat salmon dry and place skin-side down on baking sheet. Brush with avocado oil and sprinkle with salt. Tip: Room-temperature salmon cooks more evenly
  4. Spoon half the glaze over salmon, spreading evenly. Broil 5 minutes. Tip: Watch closely to prevent burning
  5. Remove from oven, flip carefully, and apply remaining glaze. Broil 3-4 more minutes until internal temperature reaches 145°F. Tip: Glaze will caramelize - this is normal
