  • 1 lb ground turkey (93% lean)
  • 1/3 cup panko breadcrumbs
  • 1 large egg
  • 2 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 1 tbsp low-sodium soy sauce
  • 1 cup fresh pineapple, diced
  • 1/4 cup water
  • 2 tbsp honey
  • 1 tbsp rice vinegar
  • 1 tsp sesame oil
  • sliced green onions and sesame seeds for garnish

Instructions
  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper. Tip: Parchment prevents sticking without extra oil
  2. In a bowl, mix turkey, panko, egg, half the garlic, half the ginger, and soy sauce until just combined. Roll into 1.5-inch meatballs (about 20 total). Tip: Wet hands prevent sticking
  3. Bake meatballs for 15 minutes until internal temperature reaches 165°F (74°C). Tip: Flip halfway for even browning
  4. Meanwhile, blend pineapple, water, honey, vinegar, remaining garlic and ginger until smooth. Simmer in a skillet over medium heat for 5 minutes until thickened. Tip: Add a pinch of red pepper flakes for heat
  5. Toss baked meatballs in the glaze. Garnish with green onions and sesame seeds.
