  • 3 cups old-fashioned rolled oats
  • 1 cup pecans, roughly chopped
  • 1/3 cup pure maple syrup
  • 2 tbsp coconut oil, melted
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon
  • 1/4 tsp sea salt

Method
 

Instructions
  1. Preheat oven to 325°F (165°C) and line a baking sheet with parchment paper. Tip: Don't skip the parchment - it prevents sticking!
  2. In a large bowl, combine oats, pecans, cinnamon and salt. Tip: For extra flavor, toast the pecans first
  3. Whisk together maple syrup, melted coconut oil and vanilla in a small bowl. Tip: Make sure oil isn't too hot or it'll cook the oats
  4. Pour wet ingredients over dry ingredients and mix thoroughly until everything is well coated. Tip: Use your hands for best cluster formation
  5. Spread mixture evenly on prepared baking sheet and press down firmly with a spatula. Tip: The tighter you pack it, the better the clusters
  6. Bake for 20 minutes, then remove from oven and let cool completely before breaking into clusters. Tip: Resist breaking while warm - they'll crisp as they cool
